Last week was a week of unplanned menus at mealtime. We spent the previous week out of town visiting relatives and did not return home until late Monday afternoon. Learn from my mistake and plan a meal for the first night you return from a trip. I usually at the very least manage to get to the store and pick up frozen pizzas before we leave (I don’t want to cook after a long trip!) but didn’t do that this time. We ended up having bacon and refrigerator biscuits for dinner upon our return. Our relatives fed us well the entire weekend so it’s not as if we were all that hungry but we did need to eat dinner. The rest of the week was a hodgepodge of pieced together dinners from days when I didn’t follow our meal plan the previous week combined with what was lurking in our freezer. Here’s what our menu will most likely be this week:
Monday: Leftover tacos from Sunday’s meal! Busy day and night for us with middle school orientation in the afternoon and meet the teacher at the elementary school tonight.
Tuesday: Roast in the crockpot (Official last day of summer vacation for the boys!)
Wednesday: Pork Chops, baked potatoes, and salad (First day of school for the boys!)
Thursday: Spaghetti and meatballs, salad, and garlic toast. Roast in the crockpot
Friday: Chili (special request from my oldest son. I still think it’s about 50 degrees too warm for this meal but since the request was for something besides hot dogs, tacos, or pizza, I’m going to oblige.)
I think our menu is rather dull this week. However, sometimes it’s nice to just fix the basics and not worry about it. Is there anything exciting on your menu this week?
