Menu Plan Madness

I didn’t menu plan last week and it was madness!  We did only eat out once (if you can consider McDonald’s eating out)  and it was actually the only planned meal of my week.  It looks like my tropical menu ideas may have to wait until April.  When did March become such a long month?  Anyway, it will be another week of basics working with what we already have around here.    Here’s what we’ll be eating this week.  Just for fun, I’ll share what we ate last week as well although I can assure you, it was not anything overly exciting!

Muffin tin meatloaf, baked sweet potatoes, rolls, and spinach salad for dinner.  Last Monday we ate…drum roll…spaghetti and meatballs.

Arroz Con Pollo (chicken with rice) for dinner.  Last Tuesday our dinner was pork chops and these homemade potato chips.

I have some PTA stuff to do at school so, I kept it simple for both myself  and the boys:  Hot dogs (J will get a sandwich of some sort), chips, macaroni and cheese, salad for dinner.    Last Wednesday, we kicked off the start of the boys’ spring break with dinner at McDonald’s.

First night of soccer practice–maybe–we are supposed to get a rain/snow mix SIGH.  Roast in the crock pot, carrots for dinner.  Last week on this day, we ate pancakes and sausage.

Cashew Chicken, noodles, and egg rolls.  Tacos rounded out last week.

We’ll probably have leftovers on the weekend.  This past weekend we had lots of taco leftovers and yesterday I made chicken strips and the homemade potato chips again.  I also made just one chocolate chip cookie last night while eating a little humble pie, I suppose.  Have you seen the pins for making just one chocolate chip cookie on Pinterest?  I admit that when I saw the pins, I thought the idea was dumb.  Seriously, who would want to make just one cookie?   Turns out the recipe served me quite well last night after J decided he hated the sugar cookies I prepared for lunchbox desserts today along with the Aldi granola bars I had bought as a backup dessert.  Yep, I was frantically searching that recipe out and making just one cookie at 10p.m. last night since I had no desire to make another batch of cookies.   There are a few variations out there but I liked that the one I used made a normal (not in a cup) kind of cookie.   The dough tasted good and it did make a nice sized cookie for his lunch today.   Have you ever had a reason to make just one cookie?   Making a proper batch of chocolate chip cookies (with some dough balls in the freezer) is on the agenda today though.

I’m linking this post up over at both Menu Plan Monday and Menu Monday.  Be sure to go check them out for ideas and inspiration!

Don’t be impressed. I think it helped a lot that we tend to eat the same meals A LOT. I’m glad to have a menu plan this week if for no other reason than it helps me get motivated to go in the kitchen. We did eat a few later in the evening dinners last week since it took me a while to decide what I was making each day.

Your menu looks tasty! I have wanted to try meatloaf in a muffin pan but haven’t gotten around to it. Have a great week!

Thank you. I actually prefer the meatloaf in the smaller muffin size. It is the one time I use my silicone muffin pan as it makes for easier clean-up, I think.

LOL That menu last week looked like one of our normal menus other than the McDonalds (and even that sometimes when things get hectic).
Can’t say I’ve ever had the occasion to make just one cookie because in my book if you don’t like a sweet then they aren’t necessary and you can go without. 🙂 Hope this week stays relatively calm for you.

Thanks. I may have felt a little nicer making the one cookie since I knew lunches were going to be slim today as I am need of a SERIOUS grocery shopping trip.

That one cookie recipe sounds awesome! I am already addicted to chocolate cup-in-a-mug, so this might get me even more hooked on chocolate. Specially now that when I bake, I can only do it for one!

(btw, I don’t know if you saw it already, but I added a better link to the strawberry+chocolate muffins in my post!)

It really did make a nice size cookie–just right for one person 🙂 J said it was good except too brown around the edges (the recipe calls for baking it 15 minutes but I think that would have been a bit too long here…watch it closely if you try it!). I’ll have to go check that recipe out–thanks!

I failed to plan last week as well, but my menu looked nothing like yours. Mine was boring and we may have eaten out a couple of times last week compared to your once. I am impressed to say the least!

Thanks but don’t be overly impressed. We eat the same meals a lot so it just looks like I did okay. I realized last night I put three meals (2 new) that we don’t have very often one this menu plan so that could make for an interesting week.

Roast works great on soccer practice nights 🙂 I am moving my roast to today since I completely forgot J has swimming after school so he’ll be super hungry and wanting a serious dinner (that I don’t really have time to cook tonight).
