Mixed Up Weather Menu Plan

mpm-chalkboard Our weather is all mixed up around here.  It’s supposed to feel like fall but it feels like summer.  HOT mid-summer.  When it was mid-summer, it felt like fall.  Makes it hard to menu plan when the last thing you want to think about doing is actually cooking.  I’m just blaming the weather but I probably wouldn’t feel like cooking if it was fall-like out there.  Last week, I had a big dinner fail.  I tried grilling chicken wrapped in an aluminum foil package.  Did you know you can still burn chicken beyond edible if it is wrapped in foil?  You do now.  It was bad enough that we had to pull a package of hot dogs out of the freezer and grill those real fast to have something to go with the side dishes.  I’m going to have to find a little cooking courage before I fire up the grill again, I think.  I also think that is why I seem to have a block on planning my menu plan today.  However, we need to eat and can’t eat out every single night so….let’s see what I can throw together:

MONDAY:

Chicken Fried Steak and Okra (onion rings for the boys who do not like okra).   I may get all fancy and make a wacky cake for dessert or not since I’m still working on a menu plan at 3p.m.  OUT

TUESDAY:

Chicken Fried Steak and Okra.

WEDNESDAY:

I want to do some sort of Masterchef mash-up menu even though I’ll never make it on the show.  And if I ever do, I’ve been told by our 8-year-old statistician that my odds of winning would be around 0.003 %.  He’s probably right.

Grilled fish tacos (fish sticks for the boys), crab meat on the grill with butter, baked potatoes, and macaroons (I plan to purchase these from a bakery) for dessert

THURSDAY:

Country style ribs in the slow cooker.

FRIDAY:

Chicken cacciatore

Guess what happens when it is 3p.m. and you still haven’t put your menu plan all the way together?   We ended up eating out (at Burger King so don’t be jealous!) but one boy has new shoes and both boys have long overdue haircuts so we crossed some to-do items off the list on our way.   I’m linking up my menu to Menu Plan Monday over at I’m An Organizing Junkie.  Go check it out if you need some menu planning ideas or inspiration!

Agreed the weather is all messed up here too! I walked out the door to do my Monday running about and the heat and humidity hit me so hard that I almost thought to try and reschedule everything!
We had one of those meal days Sunday my husband looked at me at 4:30 realizing I still hadn’t gotten up to fix dinner and he left and picked up Lee’s Chicken LOL
At least you have the rest of the week planned and you got some stuff done too! 🙂

Cooler weather has be coming soon (then, I’ll be missing my heat and humidity!). Glad you didn’t have to cook on Sunday!
