Happy Homemaker Monday and Menu Plan on a Cold Morning

I don’t know why I’m surprised to wake up to another cold morning.  It is winter after all.  I didn’t expect to see single digit temperatures again today.  With our yo-yo weather, I figured it would be at least in the 20s since I slept in a bit.  Nope, it’s another truly cold morning for us today.

I’m extremely grateful for this holiday edition of a Happy Homemaker Monday post and Menu Plan Monday.  My husband was the only one who had to get up and go to work today.  The rest of us were able to sleep in and not worry about having to be out and about in the cold.

I guess the first thing I should do is check the weather on this very cold morning (The silly cat still insisted on going outside!).

The Weather This Week

I see they’re calling for more snow (we had a surprise dusting on Saturday night) tomorrow with highs hitting the 30s.  Maybe a bit warmer on the weekend.  I’ve certainly been spoiled by the winter of temperatures in the 40s and 50s.  I imagine I’m not the only one.

So far nothing but coffee with a splash (a large splash) of almond milk.  I’ll figure out something when the boys get up for the day.


The house is blissfully quiet.  J is awake and playing the Wii U but has the sound low enough that I can’t hear it back here.  The cat, quite offended by the cold morning, is back inside and settling down for a nap.

As I look around the house

It’s not terrible for all of us being home all weekend (mostly thanks to my husband) but definitely needs a serious cleaning to be up to company standard.

Menu Plan

We didn’t follow last week’s menu plan exactly (does anyone ever do that?) so I have a carryover meal and I’m trying to figure out what we did eat instead of the shrimp last Wednesday.  One other thought from last week’s plan was that the Panda Express orange chicken sauce was extremely salty!  When my salt loving crew notices the salt, you’ve put in too much.

I’m hoping to do a bit better following the plan this week with no more “let’s just order a pizza” nights (we did use a coupon code at least).   Also, again planning to make at least 2 meals using what we already have on hand in the pantry, fridge, and/or freezer.

MONDAY:  Chicken Enchilada Soup (using frozen precooked chicken from freezer)

TUESDAY:  Roast in the Crock pot  (I may have Bunco…weather could be a factor)

WEDNESDAY:  French Toast and Sausage (From freezer.  If you’re thinking I have a lot of this in my freezer, I don’t.  This is just the meal that gets scratched off very often.  I’m determined to clear the freezer of it this week!)  (G has a school activity so this will work out nicely)

THURSDAY:  Mini Meatloaves, potatoes, and dinner rolls (Another carry over meal)

FRIDAY:  Leftovers or OUT

New Recipe I tried

Two new ones last week.  One dud and one that I’m sure would have been good had I been not grabbed the mint extract instead of the vanilla.

Buffalo Wing Pretzels weren’t a big hit.  They weren’t bad just not good enough for a repeat showing.  Also, J complained about the smell the entire time I had them in the oven.

The Mini M&M’s Blondie Recipe would have been great minus an unfortunate mix up with the extracts on my part.   On a side note, I didn’t want to waste my efforts (or ingredients!) so I turned this recipe into mint chocolate chip brownies which weren’t too bad either.

To-Do List

I didn’t do so well last week so my top 5 is pretty much the same…

  1. Clean off this desk (TODAY)
  2. Go to library (Perhaps today if it warms up…)
  3. Get J started on a plan for school project due Thursday (G mentioned he had a project also)
  4. Make changes to my Cozi digital calendar.  The preschool changed around some of the days and hours I work in the next few weeks and I updated our kitchen calendar but I’ve started to rely more on the Cozi app so need to change it as well.  Look for my thoughts on this in a later this  week.
  5. Call and reschedule my February hair appointment as I managed to double book myself on that day.

Books, Movies, and Television

I read 2 books last week!  Both were e-books on my phone.  Can you believe my teenager actually said something to the effect of he “preferred books with real pages” to me?  I finished up my Amazon Prime free e-book choice of The Moonlit Garden by Corina Bomann and ended up liking the book quite a bit more than my initial reaction.  It ultimately had a good story line and a solid ending.  I felt like I was on the journey with the main characters.   I also read How to Blog for Profit without Selling Your Soul by Ruth Soukup, I ordered this for free back in September but just now read it.  I liked her no-nonsense approach to it.  I found lots of ideas and solid advice although it did seem aimed at much bigger bloggers at times. If blogging is your main job, I would definitely say this one is worth your time to read.

Is it possible we didn’t watch any movies last week?  I think so.  Wow, that is unusual for us.  My husband and I have been watching The Blacklist on Netflix (we won’t talk about how many times I’ve said, SEE, I CAN pick out a good show!) and enjoying it.   We also won’t talk about the Chiefs loss on Saturday.  Funny the tag line in these parts used to be:  When does football season start?  and now it has become…When does baseball season start?    I’m also excited for the second half of The Flash series to return Tuesday night (although I have Bunco so I’ll have to watch it on  Wednesday) and the finale of Heroes Reborn on Thursday night.

      I was cheering on your Steelers and sorry to see them lose. I can’t believe we didn’t try watching The Blacklist sooner. We just started season 2 last night.

    I love meal planning and don’t function well without it. Still I don’t always stick with what nights we are having what. Plus sometimes if things get super crazy we will just get something out and push a meal to the next week if it is frozen. Meal planning for me is just easier when it comes to shopping and keeping things less chaotic. Still it can get hard to strictly stick to the weekly menu plan at times. Lol

      I was glad I had a plan tonight and did have to shuffle things around since I pushed the wrong button the crock pot. Keep warm doesn’t cook frozen meat!

    It’s rare that I ever follow my menu plan exactly. I feel better though to at least approach the week with a game plan.
    I feel the same way about the weather… We’ve been so spoiled that 18 degrees is feeling like single digits! Glad you were able to stay in this cold morning!

      I was glad to stay in on Monday. Of course, it meant lots of running around today. And now we have snow. I don’t think the kids are going to get their snow day though as it has mostly stopped and the roads should get cleared overnight.

    I don’t think anybody ever follows their meal plan 100% of the time, but the fact is we do plan, which is always good. It’s always best to have a plan.

      Yes, it’s always a good idea to have a plan. Well, I liked the soup but the rest weren’t great big fans. My husband referred to it as an appetizer but soup isn’t a big favorite around here.

    OK, you are the 2nd person to mention making meatloaf this week. I was going back and forth about either making meatloaf tonight or Chop Suey. But now I’m hankering meatloaf! (I didn’t make up chives and sour cream for the mashed though…)

    Living in NY – I am so over football….although DIL is a Steelers fan…but that didnt pan out either. The cold not only finally hit us here, but there was some snow with LOTS more coming this Friday. Today the wind was terrible and being out in it for five minutes was too much. But I did have to go to work…..now that it is just hubby and me, dinner takes on a whole new meaning – like maybe cereal or eggs. I like to cook on Sunday and have leftovers during the week…one pizza night especially if babysitting.

      We got our snow today as well. Supposedly more later in the week. Cereal or eggs sound like my kind of dinners!

    I completely agree with your cat, it’s much to cold to be outside. (Granted my cold is warm to anyone else above the Louisiana border but meh…it’s cold to us lol)

    I occasionally stick to the menu plan, but weeks like this one where the Mister insists on changing things up throws kinks in the works for sure.

    I am going to be repeating my to do list next week also if I don’t get up off my rump and get things going. Although in fairness having an 8yr old who doesn’t want to focus on her school work is really what’s slowing me down.

      Sometimes, having those items we didn’t even know were on our to-do list can slow down our progress a bit, huh? I just had the “I’m not in school, it’s not MY responsibility to remember YOUR homework” talk with my youngest. Perhaps there is something in the (cold) air?
