Last week already feels like a blur. The week ahead is a busy one. Partly from timing and partly from my need to pay the price of procrastination.
It’s an on-line week for J’s school so that helps some. I do admit getting up and taking him to school each morning during in person weeks helps me stay a bit more on track. Of course, I get to sleep in a bit later (unless working) during on-line weeks.
Let’s just get to the categories, joining in with our host, Sandra over at Diary Of A Stay At Home Mom.
We’re almost at peak fall foliage around here. Yes, the weather on the news forecasts it each morning. Kind of fun to see where the changes are at their best. Still a tad warmer than normal though today started much cooler than yesterday. Supposed to be a high of 75 degrees today. Hitting the 80’s on Wednesday before cooling down again. Very slim chances for some much needed rain.
How I’m Feeling This Morning
A bit tired and grumpy. Didn’t sleep great.
On My Mind
All the stuff I need to get done this week, J’s schooling, an upcoming trip, what in the world we’re going to have for dinner, and when I’m going to squeeze in a grocery store trip.
On My Breakfast Plate
Chobani flip yogurt, cookies and cream flavor. Not my first choice, one I buy for the kids. Did I mention needing to get to the grocery store? Coffee. Vitamins. Handful of blueberries.
Right Now I Am
Sitting in the basement, working on this post. Hoping it lowers my stress level a little bit writing out my weekly plan.
On My Reading Pile
Working my way through Tim Tigner‘s Kyle Achilles series. So far, they’ve all been available on Kindle Unlimited. Currently reading the fourth book in the series, Twist and Turn.

- Online training from 6:30-8, need to find out how to access it
- Gather bills to pay
- Put dinner in crock pot?

- Online training 6:30-8 Mon-Thurs
- Grocery store
- Pay bills (including website renewal stuff)
- Set up parent teacher conferences via zoom for J’s school
- Get house in order
- Do the stuff I didn’t do last week
- Make ahead some food for our trip (and the boys to eat here)
On My TV
Went on a bit of a “retro” movie kick over the weekend. Watched Weekend at Bernie’s, Snakes on a Plane (Not for the kiddos!), and we attempted The League of Extraordinary Gentleman (great for insomnia, not even sure we finished it).
The shows I’ll try and catch up on around my training are: Next and The Masked Singer.
On The Menu This Week
Absolutely no ideas. Planning from freezer and pantry, all subject to change if squeeze in a grocery store visit.
MONDAY: Taco stuff, plan to make some regular taco meat as well as some chicken taco meat. *I work 12-5* *J has a baritone lesson at 6:30* *I have on-line training 6:30-8:30*
TUESDAY: Spaghetti and garlic toast *I work 3:30-4:30 (doing a teacher a favor)* *I have on-line training 6:30-8:30*
WEDNESDAY: Already cooked ribs in freezer or the French toast (still haven’t sold it for dinner the last 2 weeks) *I have on-line training 6:30-8:30* Grocery store day if I don’t go on Tuesday
THURSDAY: Roast in crock pot for BBQ sandwiches *I have on-line training 6:30-8:30*
FRIDAY: On their own. OUT OF TOWN

Not the worst ever but hope to get it in better shape before the out of town trip.
New Recipe I Tried Last Week Or One That We Really Enjoyed
The chicken and spinach skillet dinner was a hit! G and I liked it more than my husband and J but everyone ate. Hooray! Pretty much followed the recipe exactly with one minor change. Husband had left bacon grease in pan from breakfast so I cooked my chicken and browned my onions in that before draining it off. Cooking rice in chicken stock gave it a great flavor as well.
To Relax This Week, I Will
Spend time outdoors practicing with my camera, tend to the garden, my flowers, and indoor plants, read my book, and watch the panda cam.
Something I Want To Share
I started a Fairy Garden board on Pinterest. While I don’t have the time, patience, nor talent (and in some case funds) for half the ideas I see, it relaxes me to look over the ideas and dream.
