It’s another one of those weeks around here. Please tell me we aren’t the only ones who have those kind of weeks where suddenly the grocery budget seems smaller than ever and meals must be pulled from the pantry and the freezer? I didn’t follow last weeks plan completely mainly because 3p.m. is not a good time to realize a crock pot recipe takes 7-8 hours and we ended up having leftovers a couple of nights in a row which did help. I threw most of our grocery budget at fresh fruits and vegetables this week (nature’s Emergen-C and Airborne) since the flu is finding folks all around us. As annoying as I find my boys’ homebody habits, I’m pretty sure they’ve helped limit our exposure to all the nasty bugs flying around in our community. I’m also continuing to down my Emergen-C as well as wait impatiently on some free samples of Airborne so I can compare the two. Here’s our menu of mostly straight from the freezer fare for the coming week:
Monday

Fried Pork Chops with baked potatoes possibly with leftover corn chowder from Sunday. I may also try out this grape salad since I’m looking to fix some very sour grapes. The pork chops and corn chowder are carried over from last week.
Tuesday
Roast Turkey breast and baked sweet potatoes (yep, I found a turkey breast in our deep freeze!). Surely, it’s Thanksgiving somewhere!
Wednesday
Spaghetti (technically this meal is coming from the pantry but I will be using up some odds and ends of sausage I found in the freezer)

Indonesian Garlic Chicken (I have plans to marinate this early in the week so it is ready to go!)
Friday
Homemade Pizza. I found a recipe for homemade pizza sauce on Pinterest that intrigued me a bit as I am very sick of store-bought frozen pizza. At least I’m not making them eat pizza casserole, right?

Sounds like you have a great meal plan there.
Sadly, we don’t typically have things in the freezer leftover to make meals from. My two lunch takers (husband and oldest daughter) take those the next day for lunch.
I do have some rice in the freezer, which I could make up some fried rice
YUM I did that with a BIG batch of brown rice a couple of weeks ago. So nice!
I’m needing to ‘forage’ here as well as the cupboards and fridge are literally bursting. Too much stuff. I got caught at three different stores with the produce looking so lovely Mmmmmm
If you care – I’ve gotten stuck with having had a crockpot meal planned and only first realizing it too late for the 6 to 8 hour cooking, so there is a calculation to instead cook on the stove. I think if you look on the Saving Dinner website. I have it written on a piece of paper and up on the door by my cookbooks
