
So my menu plan is going up today because I was simply not in the mood to menu plan yesterday. I confess I had a rough outline in my mind but then the weather changed and so did my plan. I realized I had back to back PTA planning type meetings in the afternoon. I also decided baked ham didn’t go well on a 65 degree January day. That was yesterday. Today we have rain and winter weather advisory with a chance for blowing snow by this afternoon. Has anyone coined the term weather whiplash yet? I’d much rather talk about that than how I didn’t manage to run ALL my errands yesterday in the great weather and have to go out in the yuck today. Hopefully, I’ll finish this post and get out while it is just rain and still somewhat warm. I’m still not in the mood to menu plan but life does go much smoother when I have a plan even if I don’t follow much of it. Forgive me if this week’s menu plan seems a bit uninspired or better yet, help me out by telling me about something exciting on your menu this week!
MONDAY
Yesterday, we ended up eating pork chops, corn, green beans, and chopped jicama. Do you like jicama? My boys do but neither my husband or myself really care for it. Of course, they eat it raw. Maybe I need to look into jicama recipes?
TUESDAY
Spiral ham baked in the oven and potatoes along with leftover corn and green beans from yesterday. I think I will also make Old-Fashioned biscuits from last week again. They were a hit! I’m making Jello for dessert because I have a couple of boxes in the pantry and I’ve been craving it.
WEDNESDAY
OUT! We’ll be attending a family birthday celebration at a Chinese restaurant.

Grilled Mozzarella sandwiches I’m planning on making these as pizza grilled cheese and maybe adding some pepperoni to the sandwiches and serving with pizza sauce. I look for my husband to eat leftover chili but I think these will be a fun Friday night dinner.
I’m curious what do you do when you are not in the mood to menu plan? Do you take a day and then go ahead like I did just now or do you take a break for the week?

Those grilled mozzarella sandwiches sound wonderful! I think I will go and make a cheese and ham sandwich now, in fact.
When menu planning is too much of a chore for me, I look at one of my previous plans and follow that. It can get repetitive if I choose the one of the last week, but if I go two weeks back, it usually works fine! (so fine, in fact, that I have thought about doing just two or three meal plans and rotate them all over the year).

Looking at previous menu plans is a great idea! I don’t know if I could handle just two or three menu plans for the year as I get so sick of some of the items (like tacos) that are constantly in our rotation but maybe two or three seasonal menu plans would work. I’ll have to think about that–thanks for the suggestion!

I’m experencing the weather whiplash here too it’s aweful!
If I don’t feel like making the plan I start bugging my husband for ideas. No matter what the menu plan needs to be made otherwise we will end up buying fast food which is not only horrible for our health but kills our budget.

Which I just want to make the side note I love coming over here and seeing what you’re doing. Seems to me there are a lot of mainstream bloggers lately that I’ve felt completely disconnected from. Like they seem to perfect to be real. A virtual Barbie I suppose would be a good way to put it.

I actually know what you mean as well because one of the reasons I started this blog was frustration with that. I wanted to show things from a “real person” perspective where my schedule/house/life isn’t perfect and projects don’t always work over time.

The weather is very strange indeed. We woke up to snow this morning but no snow day for my poor kiddos! I wouldn’t have minded sleeping in a bit either. Oh, I’ve done the I didn’t plan so let’s do fast food menu plan too many times in the past. It does do in a budget in record time, doesn’t it?

These all look so good! I tried those Mozzarella Grilled Cheese sandwiches from Martha Stewart a few weeks ago. Let me know how you like them. I felt like I would have been just as happy making my own cheddar grilled cheese. They were certainly very cheesy!

I noticed someone commented on her site that they didn’t like them very well. Maybe I’ll use a bit less cheese in them. I’m not very good at following recipes exactly anyway.

I do my menu planning a month at a time so by the time I get to the end of any given month I am done. I don’t like to repeat too much during the month which would be the easy thing to do. I look back at previous months and peruse magazines (Food Network magazine is a great resource for me) & usually can finish out the month with something new and exciting.

I may have to give the monthly menu thing a try although I seem to do better going to the grocery store once a week.
