My youngest child like chocolate chip muffins. My husband and oldest son like blueberry muffins. I’ll eat whatever muffins might be left. Give a choice, I’d probably choose something like a warm cheesecake muffin but they don’t make a box mix for those. I also don’t have a recipe and would be the only one eating them. Maybe I’ll look into adding some into the mix for the Easter brunch we host annually. Did I just hear a Pinterest search calling my name? I’ll finish this post first.
I used to buy the just add water chocolate chip muffin mix but would have to buy 2 because 1 mix didn’t make enough muffins for everyone. My husband and oldest son would eat chocolate chip muffins even though they aren’t their favorites. When I bought the blueberry muffin mix, I would hear incessant complaints from my pain in the outspoken youngest child. That left me (because I am sometimes nice) making two sets of muffins each morning. The grocery budget did not do good with 2 sets of muffin mixes in the cart every few weeks. I also didn’t make muffins as often because it was a bit of a hassle to make two kinds of muffins each time.
One day I had an idea while mixing up these:
I added about 3 muffins worth of batter into a separate bowl using my large scoop.
I added the blueberries to one bowl and a few chocolate chips to the other:
I also used different colored papers for the different types of muffins:

The yellow papers are for the chocolate chip muffins. The white papers are just there because I ran out of pink.

Of course, the best deal would be to make the muffins from scratch and adjust them to the taste of each person. I’m pretty sure there is a recipe for that type of muffin in one of my Betty Crocker cookbooks. However, this works well for those of us who aren’t chipper enough in the mornings to be mixing up muffins from scratch but still want to give our families fresh-baked muffins on cold mornings. What kind of muffins do you prefer?

I like blueberry, the kids like chocolate chip and my husband likes lemon poppy seed so no one is ever really fully happy but thankfully they don’t throw too big of a fit. Mind you I can’t remember the last time I made muffins.
I take it with that brand the blueberries weren’t already mixed in? Or did you separate the batter and then pick out all the blueberries?

No, I am a bit of a snob and will usually only buy the ones with the real blueberries in the little metal can so they were separate. I was just watching a documentary talking about the ingredients in the blueberry bits and ick. On a side note, viewing documentaries about the strange things in our food just prior to dinnertime is not the best idea (well, it was a great diet helper!). I’m not sure how you’d add lemon poppy seed into the same mix. I generally make muffins every couple of weeks when I get sick of watching them eat Eggo waffles (or when they revolt from them!).

Ah. I’ve never seen the type with real blueberries in it. We eat cereal in the house and that’s about it other than I eat oatmeal but that’s only because last year the kids were on an oatmeal kick and now I have a ton of it (never buy oatmeal from Sam’s Club if you don’t have other people to share the box with!). I haven’t had an Eggo waffle in the house for oh my…. 7 years? I’ll have to see if I can find a good baking mix though.
Have you ever tried baking the muffins with apple sauce? That seems to be the big thing these days. My oldest said they made them in home ec this year and that they were pretty good.
(And yeah I think the hubby is SOL if he wants lemon poppy seed and I don’t individually buy the mix thankfully Martha White is generally only $1 a bag LOL)
