I started thinking about the menu plan this week on Saturday when I was in Hy-Vee grabbing a few quick items for lunch mainly chicken noodle soup for J. We actually ran out of chicken noodle soup! He’d been struggling with a pretty bad chest cold since about Wednesday of last week. Apparently, he didn’t read my post about our healthy habits and how we rarely get sick. I thought about my menu again on Sunday when I was actually grocery shopping for the week. I am proud to say I did NOT go the grocery store yesterday! My original menu plan has changed again since we ate dinner Monday night…
Monday
Spaghetti and meatballs with salad and garlic toast. This was supposed to be our Tuesday dinner but I was exhausted all day as an on-the-mend child found his way into our bed at 3:30a.m. and I never did get back to sleep properly. My thought was there would be leftovers available tonight since I have a PTA meeting. However, we had a guest (friend of G) for dinner and ended up with NO LEFTOVERS! Yikes.
Tuesday
Thank goodness I have some BBQ roast leftovers in the freezer. We also have leftover taco meat from Sunday (we had tacos yesterday) as well as frozen popcorn chicken or fish sticks. I’m also hoping to get OUT for the entire evening and meet up with friend after my PTA meeting. It is my turn to take snacks for our PTA meeting so I’m also putting together fruit dip (I never made the grape salad but I mixed the 2 main components together and it makes a very quick and very easy fruit dip!) with strawberries, taking spinach dip and chips (I bought the dip for Sunday night and then never opened it) as well as vegetable tray which I’m buying because I’m lazy. I’ll probably also put together some sort of cheese tray unless I find a better idea at the store this afternoon.
Wednesday
Another busy evening out as I have evidently committed to helping to set up for a Council PTA event. This is also the first day of J’s swim lessons sponsored by the school district. I’m not too happy about him going as he’s getting over this cold but I don’t want him to miss the very first lesson either. I’m thinking maybe bacon wrapped chicken or anything else that I can prepare ahead of time. Shall I just come out and say I cannot decide what to put on the plan for tomorrow?
Thursday
Wait, what’s this a night with nothing on the calendar? Wow. Pork Chops. Yes, again. They have made it into the round of the eternal rotation as everyone likes them!
Friday
My husband’s birthday. We’ll be eating out at a local Mexican restaurant and then returning here for chocolate birthday cake and ice cream.
Warning: This menu plan subject to change! Next week will be another busy week of teacher conferences so I don’t look for that menu to be any easier to plan. Well, I am off to the store AGAIN today. Today’s trip was planned as I didn’t want to buy the strawberries for tonight too early in advance. How many times do you change your menu plan during the course of planning or implementing it?

Yes, I should know better. I did actually remember saying I would help but when I didn’t hear anything for 3 weeks…well, I thought I was off the hook. I would have appreciated more than a day’s notice. SIGH. Oh well, this should be an easy one

LOL at least your menu plan doesn’t look like mine with a lot of processed foods. I always tell people I never cook unless it’s Thanksgiving otherwise if it comes out of a box or a can it’s golden
