I didn’t menu plan last week and it was madness!  We did only eat out once (if you can consider McDonald’s eating out)  and it was actually the only planned meal of my week.  It looks like my tropical menu ideas may have to wait until April.  When did March become such a long month?  Anyway, it will be another week of basics working with what we already have around here.    Here’s what we’ll be eating this week.  Just for fun, I’ll share what we ate last week as well although I can assure you, it was not anything overly exciting!

MONDAY

Muffin tin meatloaf, baked sweet potatoes, rolls, and spinach salad for dinner.  Last Monday we ate…drum roll…spaghetti and meatballs.

TUESDAY

 

Arroz Con Pollo (chicken with rice) for dinner.  Last Tuesday our dinner was pork chops and these homemade potato chips.

WEDNESDAY

I have some PTA stuff to do at school so, I kept it simple for both myself  and the boys:  Hot dogs (J will get a sandwich of some sort), chips, macaroni and cheese, salad for dinner.    Last Wednesday, we kicked off the start of the boys’ spring break with dinner at McDonald’s.

THURSDAY

First night of soccer practice–maybe–we are supposed to get a rain/snow mix SIGH.  Roast in the crock pot, carrots for dinner.  Last week on this day, we ate pancakes and sausage.

FRIDAY

 

 

Cashew Chicken, noodles, and egg rolls.  Tacos rounded out last week.

 

We’ll probably have leftovers on the weekend.  This past weekend we had lots of taco leftovers and yesterday I made chicken strips and the homemade potato chips again.  I also made just one chocolate chip cookie last night while eating a little humble pie, I suppose.  Have you seen the pins for making just one chocolate chip cookie on Pinterest?  I admit that when I saw the pins, I thought the idea was dumb.  Seriously, who would want to make just one cookie?   Turns out the recipe served me quite well last night after J decided he hated the sugar cookies I prepared for lunchbox desserts today along with the Aldi granola bars I had bought as a backup dessert.  Yep, I was frantically searching that recipe out and making just one cookie at 10p.m. last night since I had no desire to make another batch of cookies.   There are a few variations out there but I liked that the one I used made a normal (not in a cup) kind of cookie.   The dough tasted good and it did make a nice sized cookie for his lunch today.   Have you ever had a reason to make just one cookie?   Making a proper batch of chocolate chip cookies (with some dough balls in the freezer) is on the agenda today though.
